Ingredients
• 2 Tablespoons extra virgin olive oil
• 3 Tablespoons fresh lime juice
• 1 1/2 teaspoons honey
• 1/2 teaspoon salt
Salad
• 1 pound shrimp, cooked, peeled, and deveined
• 4 cups seedless watermelon cubes
• 1/4 cup crumbled Feta cheese
Instructions
1. COMBINE the olive oil, lime juice, honey, salt and pepper in a large bowl.
2. ADD the cooked shrimp and toss to combine.
3. ADD the watermelon and TOSS gently to combine.
4. Add the crumbled Feta cheese
5. Plate and drizzle with extra virgin olive oil
